Lemon Curd Eton Mess {Delightfully Delicious!}

Elegant. Light. Tangy. My easy Lemon Curd Eton Mess recipe is a zesty and delicious take on a classic British Eton Mess. By swapping strawberries for my luscious lemon curd – this dessert is creamy, crisp, and refreshing. With mounds of whipped cream, delicately crumbled meringues, and sweet and tangy lemon curd, this dessert is sure to become one of your foolproof favourites. Lemon Curd Eton Mess is a nice light treat for the spring/summertime however is delicious enough to be enjoyed all year round!

Lemon Curd Eton Mess

To make this recipe you will need:

  • Meringues – store bought meringue cookies/kisses/nests or try using my easy to make, classic meringue kisses!
  • Sweetened Whipped Cream – made with heavy cream, vanilla, and a bit of sugar
  • Lemon Curd – easily made using my simple lemon curd recipe or store bought lemon curd (found in the jam section of your local grocery store)

Let’s make Lemon Curd Eton Mess!

Prepare sweetened whipped cream by combining heavy cream, sugar, and vanilla, in a large bowl (note: if using granulated sugar, let sugar sit in the cream for 1-2 min to dissolve before whipping). Whip using a hand or electric mixer until soft peaks form. Keep chilled until use.

Prepare your lemon curd (my simple lemon curd or store bought) and gather 4-6 small glass serving cups.

Assembly

Crush your meringues (my homemade classic meringues or store bought meringues) into pieces with your hands or a rolling pin.

To the bottom of each of your serving cups, spoon approximately 2 tbsp of whipped cream. Then, add 1-2 tsp of lemon curd, and a couple meringue pieces.

Repeat this process until each cup is 3/4 full. Sprinkle a few crushed meringue pieces on top as garnish.

Enjoy! (note: this dessert is best enjoyed immediately after assembly!)

Ingredients
  

  • 1 cup Heavy Cream chilled
  • 2 tbsp Granulated sugar or powdered sugar
  • 2-3 cups Meringues (cookies/nests) crushed into pieces
  • 1/2-3/4 cup Lemon Curd (store bought or homemade – see recipe notes for my simple lemon curd recipe!)

Sofia’s Tips:
  • This dessert is simple to make and can be prepared in whichever glasses/cups you have on hand!
  • Meringues will soften once combined with cream and lemon curd. Be sure to assemble these Eton Mess desserts just before serving
  • You can adjust meringue, cream, and lemon curd proportions to your taste!
  • Seasonal berries can also be added to this dessert for a colourful and juicy treat
