Heat treat your flour: OVEN Directions: Preheat oven to 350F. On top of a large baking pan, spread flour into a flat layer. Bake for 10 minutes. Allow flour to cool completely. Once cool, break any lumps in the flour with your fingers and place in a bowl. MICROWAVE Directions: Place flour in a microwave safe bowl. Heat on HIGH at 30s increments, then stop, and stir. Continue to microwave until the central temperature reaches 165F (74C) on a food thermometer. This typically takes ~2 min. Allow flour to cool completely. Once cool, break any lumps in the flour with your fingers.
Brown Butter: In a small pot and over medium heat, melt your butter until it looks frothy, smells nutty and has little golden brown flecks throughout (see my brown butter recipe for detailed instructions). Set aside until ready to use.
Flax Egg: In a small bowl, combine ground flaxseed and water. Mix together and let sit for ~5 minutes or until thick and gloopy (just like an egg). Set aside until ready to use.
In a large bowl, stir together brown butter, sugar, flax egg, and vanilla.
Add heat-treated flour and salt. Add additional water, 2 tbsp initially and then 1 tbsp at a time, until a cookie dough texture is created.
Mix-in chocolate chips.
Eat by the spoonful or scoop and store in the freezer as cookie dough balls.
