Mini Egg Saltine Cracker Toffee {Easter Crack}

Mini Egg Saltine Cracker Toffee (Easter Crack) is a sweet, salty Easter treat with buttery toffee, milk chocolate, and crunchy Mini Eggs. Easy, festive, and so simple to make.

Ingredients
  

  • 1 cup Brown Sugar packed into measuring cup
  • 1 cup Unsalted Butter cold or room temperature
  • 1 sleeve Saltine Crackers plus 3-5 extra crackers, as needed, to fill your baking tray
  • 1-2 cup Milk Chocolate as much as needed to cover your toffee
  • 1 cup Mini Eggs (or your favourite chocolate pieces) roughly chopped
  • 1 pinch Flaked Salt (optional)
  • 1-2 tbsp Sprinkles (optional) of your choice!

Instructions
 

  • Preheat oven to 350F. Line baking tray with tin foil (note: allow the tinfoil to wrap around the overhangs of the baking tray).
  • Cover surface of baking tray with saltine crackers. Set aside.
  • In a small saucepan, bring butter and brown sugar to a boil. Lower heat to simmer and allow to gently boil until mixture becomes thick and shiny ~5 minutes.
  • Immediately remove toffee from the heat and pour over the saltine crackers. Spread toffee flat over saltines to ensure it is distributed evenly.
  • Place baking tray into the preheated oven. Cook for 5 minutes.
  • Remove baking tray from the oven and evenly distribute chopped chocolate on top. Turn off oven and return baking tray to the oven for an additional 1-2 minutes, or until the chocolate on top look glossy/melted.
  • Remove from oven and spread chocolate flat over crackers.
  • Over top of melted chocolate, add Mini Egg pieces and sprinkles.
  • Allow saltine toffee to cool in the fridge/freezer for 15-30 minutes, or until chocolate is set on top.
  • Break into pieces, serve, and enjoy!
