The BEST Caramel Apple {made with dates!}

The BEST caramel apple wraps a crisp apple in flattened Medjool dates (the "faux" caramel layer) and dips the whole thing in chocolate and crunchy pecans. There's no caramel to cook, no candy thermometer, and you won't believe this is not a classic caramel apple!

Ingredients
  

  • 1 Medium Crisp Apple such as Granny Smith, Honeycrisp, Pink Lady
  • 10 Medjool Dates plus more as needed depending on the size of your apple
  • 1/2 cup Semi-sweet or dark chocolate
  • 1/2 tsp Coconut Oil
  • 1/4 cup Chopped Pecans
  • 1 treat stick or cake pop stick

Instructions
 

  • Remove the pits from the Medjool dates.
  • Arrange the dates open-side up and side by side on a sheet of parchment paper or plastic wrap. Press them together to create a rectangular sheet.
  • Cover the dates with a second sheet of parchment/plastic wrap. Use a rolling pin to flatten them into a thin, sticky layer.
  • Remove the top sheet of parchment/plastic wrap and press the flattened dates around the apple. Patch any uncovered areas with additional pieces of date as needed.
  • Stand the covered apple upright and insert a treat stick firmly into the centre.
  • Combine the chocolate and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until about three-quarters of the chocolate has melted. Continue stirring until completely smooth.
  • Dip the date-covered apple into the melted chocolate. Use a spoon or spatula to help coat the sides evenly.
  • Immediately dip or roll the chocolate-covered apple in the chopped pecans.
  • Refrigerate for about 20 minutes, or until the chocolate has set.
  • Slice and enjoy!

Notes

Sofia’s Tips:
  • If your dates feel particularly firm or dry, they'll be more difficult to form into one sheet. Their sticky edges will help them form one continuous layer.
  • Keep the dates close together before rolling!
  • Melting the last pieces with the residual heat reduces the chance of overheating your chocolate.
