It is *dare I say* the perfect compliment to your morning coffee!
1/3cup (80ml)Vegetable OilCanola or other light, flavourless oil
1/4cup (60ml)Milk of your choice!
1tspBaking Soda
1tspCinnamonground
1/2tspSaltkosher or fine sea salt
1tspVanilla Extract
1/2 - 3/4cup (100g)Dark or Semi-Sweet Chocolate Chunksset aside a few extra chunks for topping
Instructions
Start by preheating your oven to 350 F (325F convection bake). Lightly oil a 9"×5" loaf pan.
In a large bowl, combine the eggs, mashed bananas, oil, milk, brown sugar, and vanilla extract. Beat well until all ingredients are incorporated.
In a small bowl, mix together flour, baking soda, salt and cinnamon. Combine with wet (banana) mixture. Mix until just combined and flour mixture is evenly incorporated.
Fold roughly chopped semi-sweet chocolate into mixture.
Pour the batter into your prepared loaf pan and sprinkle with a few additional chocolate chunks.
Bake for ~70 minutes or until a toothpick inserted into the centre comes out clean.
Cool banana bread in loaf pan for 10 minutes then loosen from pan with a knife and continue to cool completely on top of wire cooling rack.

Want to quickly ripen bananas?! You can put bananas in the freezer for 2-3 hours, remove and they have been flash ripened!
Coconut oil can be substituted with Canola or any other, light vegetable oil
When freezing loafs/cakes make sure to individually, double-wrap each with plastic wrap and tin foil or use a sealed freezer bag! (can be frozen for 3 months)
This Easy Chocolate Chunk Banana Bread can be stored for up to 2 days in an air-tight container at room temperature, 1 week in the fridge, and up to 6 months in an air-tight freezer bag/container in the freezer.
