Easy Peach Crumb Bars (with walnuts!)

Buttery. Juicy. Nutty. My Easy Peach Crumb Bars are filled with maple-sweetened peach slices, stacked on top of a buttery crust, and topped with a nutty crumble! Ingredients
  

  • 2 cups All-purpose Flour
  • 1 1/2 cups Rolled Oats
  • 1/2 cup Walnuts raw or roasted, coarsely chopped
  • 1 cup Unsalted Butter melted
  • 2/3 cup Granulated Sugar or Maple sugar
  • 1 tsp Cinnamon
  • 1/2 tsp Kosher Salt

Peach Filling

  • 6-7 Medium Peaches (ripe, sweet, firm) or 5 large, cut into slices
  • 1-2 tbsp Fresh Lemon Juice freshly squeezed juice from 1/2 a lemon
  • 1 tbsp Cornstarch
  • 1/4 cup Maple Syrup
  • 1 tsp Cinnamon ground
  • pinch of salt

Instructions
 

Oat-Walnut Crust & Crumble

  • Preheat your oven to 375F (350F convection bake). Line a 9"x 9” baking pan with parchment paper.
  • In a large bowl, mix together flour, oats, walnuts, sugar, salt, and melted butter.
  • Press 3/4 of mixture into the bottom of your lined baking pan. Set aside the rest.
  • In a bowl, mix together sliced peaches, maple syrup, lemon juice, cornstarch, cinnamon, and salt. Let sit for 1 minute and then scoop peaches onto crust (without the excess juices).
  • Add the remaining 1/4 of the crumble mixture over top of the peaches (note: you can always sprinkle less of the crumble mixture on top and freeze what is remaining for a future mini crumble dessert!)
  • Bake peach crumb bars at 375F (350F convection oven) for 45 minutes. It will be done when the crumble mixture on top has become golden brown and a knife easily goes through your peaches.
  • Allow peach crumb bars to cool completely in the baking pan and *if you have the time* cool for an additional 30 min in the fridge (note: this allows the bars to continue setting and makes them slice easier)
  • Cut and enjoy!

  • Want to add apples to your peach bars? What a great combination - simply substitute a portion of your favourite crisp and sliced apple to this recipe! Popular picks include Honey Crisp, Braeburn, and Granny Smith. You may need to add another 5-10 min to your cook time for your apples to soften
  • Can I make this recipe Gluten-Free? Yes! You can easily substitute regular all-purpose flour with a 1:1 gluten-free mix or make my Easy Nutty Peach Bars (coming soon) which are naturally gluten-free!
  • These bars can be stored in an air-tight container in the refrigerator for up to 1 weeks or in the freezer for up to a month. Once ready to use, simply thaw in the refrigerator and warm briefly in the oven for the best "freshly-baked" flavour!
