Warm. Soft. Chocolate-y. This Hot Chocolate Mug Cake tastes just like a cup of hot cocoa in cake form. The batter warms in seconds, uses only 1 packet of hot cocoa, and rises into the softest little chocolate cake!
Add milk, oil, and vanilla extract to a mug (12 oz or larger). Microwave for 30 seconds.
Add hot cocoa mix, flour, baking powder, and a pinch of salt. Mix with a fork until combined.
Add chocolate chips and stir into the batter.
Microwave on high for 1 minute. Allow to cool for another minute. (note: you can check for readiness after cooking by inserting a toothpick into the centre and noticing a few crumbs stick to it)
Top with whipped cream, mini marshmallows, and/or chocolate chips/shavings/sauce and enjoy!
