Can I make this dairy-free?
Absolutely! Just like your favourite cup of hot chocolate, you can use your preferred dairy or non-dairy milk. Water is also an option to replace the milk with and dairy-free chocolate chips can be used in place of traditional ones.
My mug cake came out gummy. What happened?
Overmixing or microwaving too long can cause this. I recommend mixing just until combined and sticking to the recommended cook time. Since all microwaves heat differently, if you know that your microwave heats up quickly either reduce the power and reassess after 1 min (allowing for additional checks every 15 seconds until a toothpick comes out with a few crumbs attached) or simply heat for 45 seconds before reassessing.
Can I double this recipe?
Of course! This Hot Chocolate Mug Cake recipe is for 1 serving however can be very easily doubled to create two individual mugs. I recommend cooking each individually as two in the microwave will lengthen the cook time.
What size mug should I use?
A 12-oz mug or larger is perfect to prevent overflow.

How It All Comes Together
Warm the base.
Add milk, oil, and vanilla to a 12-oz (or larger) mug. Microwave for 30 seconds until warm.

Build the batter.
Stir in the hot cocoa mix, flour, baking powder, and a pinch of salt.
Mix with a fork until smooth.


Add the melty bits.
Fold in the chocolate chips.


Microwave.
Heat on high for 1 minute. The cake should rise and look set on top. (note: you can check for readiness by inserting a toothpick into the centre and noticing a few crumbs stick to it)

Let it rest.
Wait 1 minute. This helps the crumb settle and become soft and tender.
Top it off.
Top with whipped cream, mini marshmallows, chocolate chips, shavings, or a drizzle of chocolate sauce.
