While not totally necessary, I recommend resting the batter for at least 5 minutes to create a consistently tender and light waffle. If you have even more time, 15-30 minutes may create for an even greater lift in your waffles.

Use ¼ cup of batter, as written in the recipe.

How long do you cook the waffles?
Cook the waffles for ~5 minutes in the waffle maker. Resist the temptation to check on your waffles before 5 minutes as this will effect the creation of a crispy exterior.

How It All Comes Together

Whisk the flour, sugar, baking powder, and salt together in a large bowl (mixing until everything looks evenly combined).

Create a well in the centre of the dry mixture, giving yourself a small space to pour in the wet ingredients.

Add the milk, Greek yogurt, eggs, oil, and vanilla into the well.

Stir the wet ingredients slowly into the dry, mixing just until combined. Let the batter sit for ~ 5 minutes.

Turn on your waffle maker and let it heat up.

Ingredients
 
 

  • 2 cups All Purpose Flour
  • 1/3 cup Granulated Sugar
  • 1 tbsp Baking powder
  • 3/4 tsp Salt
  • 1 cup Milk
  • 1 cup Greek Yogurt
  • 1/3 cup Vegetable Oil
  • 2 Eggs (large)
  • 2 tsp Vanilla Extract

Instructions
 

  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • Create a well in the centre of the dry mixture. Add Milk, Greek yogurt, eggs, oil, and vanilla to the well.
  • Slowly incorporate the wet ingredients into the dry, mixing batter just until combined. Let it sit for ~5 minutes.
  • Turn on waffle maker.
  • Open hot waffle maker and add 1/4 cup (~2 tbsp) of batter to your waffle maker. Close the lid and cook for ~5 minutes.
  • Remove from waffle maker and let cool slightly. Finish with a drizzle of maple syrup and piece of butter, as desired.
  • Serve and Enjoy!
