Crisp saltines, buttery brown sugar toffee, melted milk chocolate, and chopped Mini Eggs combine to form a sweet-and-salty brittle that only requires 5 ingredients and can be made in minutes. The optional addition of flaked sea salt and festive Spring sprinkles creates a delicious snack that feels extra special for the holidays.   • Unsalted butter: 1 cup, melts with the brown sugar to create the glossy toffee layer.
  • Saltine crackers: 1 sleeve (plus 3 to 5 crackers to fill your baking tray), to make the crisp brittle foundation. Lay them close together to cover the tray evenly.
  • Milk (or semi-sweet) chocolate: 1-2 cups to cover saltines, added after the first bake so it melts into a smooth top layer.

Before You Bake: FAQ

Why does the toffee need to look thick and shiny?
That’s your cue that the butter and brown sugar have properly come together. It should look smooth and cohesive before you pour it over the crackers.

Do I need to spread the toffee over the crackers?
I recommend that you do! Unless you are able to pour your toffee in a thin stream over all of your saltines, I recommend that you gently spread the toffee to cover the crackers more evenly.

How do I know when the chocolate is ready to spread?
Good question! This happens pretty quickly. Make sure that your chocolate is room temperature, and not expired, and after 1-2 minutes of return to the oven (with oven off) over the toffee, It should look glossy and softened. Once it reaches that melted look, you can spread it flat.

When is it ready to break into pieces?
Once the chocolate has set on top after chilling in the fridge, it’s ready to break and serve!

How It All Comes Together

Preheat your oven to 350°F. Line a baking tray with tin foil, letting the foil wrap up and over the sides of the tray so everything stays neatly tucked in.

Cover the surface of the baking tray with a layer of saltine crackers, using the extra 3 to 5 crackers, as needed, to fill the tray. Keep the crackers close together so the base feels even and snug.

Bring the butter and brown sugar to a boil in a small saucepan. Lower the heat to medium-low and let the mixture gently boil until it becomes thick and shiny. Stir continuously.

Pour the hot toffee mixture immediately over the saltine crackers. Spread it flat as needed so it’s distributed evenly across the tray. Work steadily here, while the toffee is still warm and easy to move.

Bake the tray for 5 minutes. The toffee will settle into the crackers and deepen into that sweet, buttery layer underneath.

Remove the tray from the oven and evenly distribute the chopped milk chocolate on top. Return it to the oven (which has been turned off!) for another 1 to 2 minutes, or until the chocolate looks glossy and melted.

Spread the melted chocolate flat over the crackers, smoothing it gently into an even layer. Then scatter over the chopped Mini Egg pieces, pinch of flaked salt, and seasonal sprinkles.

Chill the saltine cracker toffee in the fridge for 15 to 30 minutes, or until the chocolate is set on top. This is where everything firms up and becomes easy to break into pieces.

Break into pieces once fully chilled, then serve and enjoy. Expect a little crackle, a little crumble, and plenty of cheerful nibbling.

Ingredients
  

  • 1 cup Brown Sugar packed into measuring cup
  • 1 cup Unsalted Butter cold or room temperature
  • 1 sleeve Saltine Crackers plus 3-5 extra crackers, as needed, to fill your baking tray
  • 1-2 cup Milk Chocolate as much as needed to cover your toffee
  • 1 cup Mini Eggs (or your favourite chocolate pieces) roughly chopped
  • 1 pinch Flaked Salt (optional)
  • 1-2 tbsp Sprinkles (optional) of your choice!

Instructions
 

  • Preheat oven to 350F. Line baking tray with tin foil (note: allow the tinfoil to wrap around the overhangs of the baking tray).
  • Cover surface of baking tray with saltine crackers. Set aside.
  • In a small saucepan, bring butter and brown sugar to a boil. Lower heat to simmer and allow to gently boil until mixture becomes thick and shiny ~5 minutes.
  • Immediately remove toffee from the heat and pour over the saltine crackers. Spread toffee flat over saltines to ensure it is distributed evenly.
  • Place baking tray into the preheated oven. Cook for 5 minutes.
  • Remove baking tray from the oven and evenly distribute chopped chocolate on top. Turn off oven and return baking tray to the oven for an additional 1-2 minutes, or until the chocolate on top look glossy/melted.
  • Remove from oven and spread chocolate flat over crackers.
  • Over top of melted chocolate, add Mini Egg pieces and sprinkles.
  • Allow saltine toffee to cool in the fridge/freezer for 15-30 minutes, or until chocolate is set on top.
  • Break into pieces, serve, and enjoy!
