They disappear completely into the marshmallow mixture, so no one notices they’re there, but they quietly add fibre and plant-based omega-3s, nutrients that support overall brain health as part of a balanced diet. The freeze-dried strawberries add a pop of natural colour, a hint of berry flavour, and antioxidants. Everything You Need for The Best Rice Krispie Squares

One of my favourite things about this recipe is how simple it is to remember. No weighing cereal or wondering what to do with half a bag of leftover marshmallows. Just one standard box of puffed rice cereal, two bags of marshmallows, butter, vanilla, and salt. It’s the kind of recipe you’ll memorize after making it once and pull out for birthday parties, bake sales, lunchboxes, movie nights, and those ordinary afternoons that deserve a little something sweet.

Marshmallows

Use two standard packages of mini or large marshmallows. Reserve two cups before melting. Those whole marshmallows become soft, gooey pockets throughout the finished squares.

Butter

Browning the butter is the biggest upgrade in this recipe. It only takes a few extra minutes and adds a warm, nutty flavour that makes these taste homemade in the best possible way.

Puffed Rice Cereal

One standard-sized box keeps this recipe simple. No measuring cups required.

Vanilla Extract

Why are my Rice Krispie Squares hard?

The biggest reasons are overheating the marshmallows, pressing the mixture too firmly into the pan, or not using enough marshmallows. Melt the marshmallows gently over medium-low heat and press the mixture in with a light hand.

Why do you reserve marshmallows until the end?

Those extra marshmallows don’t melt completely, leaving soft, gooey pockets of marshmallow throughout the squares. It’s one of my favourite tricks for creating the perfect Gooey Rice Krispie Square texture.

Why brown the butter in these Marshmallow Squares?

Brown butter adds a rich, toasted, almost caramel-like flavour that makes these taste far more homemade than the classic version. It’s a small step that makes a big difference!

Can I use large marshmallows instead of mini marshmallows?

Absolutely! Both work well in this recipe. Large marshmallows may just take an extra minute or two to melt.

Why are my Rice Krispie Squares falling apart?

Usually this happens when there isn’t enough melted marshmallow coating the cereal or the mixture wasn’t stirred thoroughly. Make sure every piece of cereal is evenly coated before transferring it to the pan and pack the Rice Krispie Squares into the pan.

Can I freeze Rice Krispie Squares?

Yes! Once completely set, wrap them well or store them in an airtight container in the freezer for up to three months.

Can I skip the freeze-dried strawberries?

Of course. They’re completely optional, but I love the flavour and the little burst of pink they add. They make these especially fun for birthdays, Valentine’s Day, baby showers, or simply brightening an ordinary Tuesday.

Can you taste the flax seeds?

Not at all! Whole flax seeds often pass through the digestive system intact, so your body can’t access many of their nutrients. Ground flax is much easier to digest and allows your body to absorb more of its beneficial fats and nutrients. Finely ground flax blends right into the marshmallow mixture. Most people never know it’s there!

How It All Comes Together

Generously butter a 9 × 13-inch baking pan and set it aside.

If using freeze-dried strawberries, crush them into a fine powder using a rolling pin, food processor, or mortar and pestle.

In a large pot over medium-low heat, melt the butter. Continue cooking, stirring constantly, until the butter smells nutty and golden brown flecks appear on the bottom of the pan.

Reserve 2 cups of marshmallows, then add the remaining marshmallows to the browned butter. Stir constantly until almost completely melted before removing the pot from the heat. Stir in the vanilla and flaky salt.

If using the optional mix-ins, stir in the crushed freeze-dried strawberries and ground flax seed.

Add the puffed rice cereal and the reserved marshmallows. Stir quickly until everything is evenly coated.

Transfer the mixture to the prepared pan.

Using buttered hands or a buttered piece of plastic wrap, gently press the mixture into the pan. Resist the urge to pack it tightly. A gentle press creates softer, chewier squares.

Let the squares rest at room temperature for 1 to 2 hours until firm.

Cut into 24 squares and enjoy.

Make Them Your Own

One of my favourite things about these Rice Krispie Squares is how easy they are to customize.

Funfetti: Fold colourful sprinkles into the mixture or scatter them over the top for birthdays.

Chocolate Drizzle: Finish with melted milk, dark, or white chocolate.

Strawberry Burst: Sprinkle extra crushed freeze-dried strawberries over the top for even more colour and berry flavour.

Fluffer Nutter: Stir 1 to 2 tablespoons of peanut butter into the melted marshmallows and finish with chopped roasted peanuts.

Ingredients
 
 

  • 10 oz Mini or Large Marshmallows (2 standard packages) reserve 2 cups for addition at the end!
  • 1/4 cup Unsalted butter + extra for greasing pan!
  • 12 oz Rice Krispie cereal (1 standard package) such as Rice Krispies
  • 1 tsp Vanilla Extract
  • 1/2 tsp Flaked Salt

Optional Mix-Ins

  • 1 cup Freeze-dried Strawberries crushed
  • 1/4 cup Ground Flax Seeds

Instructions
 

  • Generously butter a 9"x13" baking pan. Set aside.
  • Crush your freeze-dried strawberries in a sealed zippered bag with a rolling pin (note: alternatively you can pulse in a food processor or crush with a morter and pestel). Set aside.
  • In a large pot over medium-low heat, melt your butter. Continue cooking butter until the mixture smells nutty and you see brown flecks start to form on the bottom of the pan. Stir constantly.
  • Add marshmallows to the pan, reserving 2 cups for mixing in at the end. Melt over medium-low heat, mixing constantly until most of the marshmallows are melted. Once marshmallows are melted, remove from the heat.
  • Add vanilla extract and salt, stir.
  • (optional) Add crushed freeze-dried strawberries and ground flax seeds into the marshmallow mixture.
  • Add puffed rice cereal and remaining marshmallows to the marshmallow mixture. Stir fairly quickly until all ingredients are evenly distributed into the melted marshmallows.
  • Transfer the mixture to your greased baking pan. Using buttered hands or a piece of plastic wrap that has been buttered, press the Rice Krispie Treats into your prepared pan.
  • Cover with plastic wrap and allow the The Best Rice Krispie Treats to set for 1-2 hours at room temperature, until the surface feels firm.
  • Cut into 24 pieces and enjoy!

Other Optional Decorations

  • Funfetti: Add your favourite, colourful sprinkles to your Rice Krispie Treats either during mixing, just after pressing into baking pan, or after coating in melted chocolate!
  • Chocolate Drizzle: Drizzle your melted chocolate over top of surface of Rice Krispie treats in baking pan. Let chocolate set, cut, and enjoy!
  • Strawberry Burst: Add extra freeze-dried strawberries to the surface of your Rice Krispy Treats.
  • Fluffer Nutter: Add 1-2 tbsp of peanut butter to the marshmallow mixture and top with crushed peanuts.

Notes

Sofia’s Tips:
  • How do I prevent the marshmallow from sticking to me? I recommend generously buttering all baking pans, knives, hands, and plastic wrap to ensure you don’t stick to your Rice Krispie treats! As the treats set, they can be wrapped in plastic wrap and unwrapped when ready to enjoy them!
