The BEST caramel apple wraps a crisp apple in flattened Medjool dates (the “faux” caramel layer) and dips the whole thing in chocolate and crunchy pecans. There’s no caramel to cook, no candy thermometer, and you won’t believe this is not a classic caramel apple!
Medjool dates have a naturally sticky texture and deep caramel-like sweetness, which makes them perfect for wrapping around your favourite crisp apple. The naturally soft, chewy date layer gives you that caramel-like bite with just five main ingredients and about 10 minutes of prep time.

Crisp Apple: Choose a firm, crisp apple that can stand up to the chewy date layer

- Honeycrisp: Extra crisp with a balanced sweet-tart flavour.
- Pink Lady: Firm, juicy, and slightly tart.
Medjool Dates: naturally soft, sticky, and caramel-like
You’ll need approximately 10 dates, but keep a few extras nearby. Larger apples may need additional dates to cover the entire surface.
Semi-Sweet or Dark Chocolate: Either works
Dark chocolate gives you more contrast against the naturally sweet dates, while semi-sweet makes the finished apple a little sweeter.
Coconut Oil: 1/2 teaspoon helps the melted chocolate become smooth and easier to coat over the dates.
Pecans: Chopped pecans add crunch and a slightly buttery, nutty flavour.

Do I need to peel the apple?

Can I use milk chocolate?
Sure. Keep in mind that milk chocolate will make the finished apple sweeter than semi-sweet or dark chocolate.

Absolutely! You can prepare the apple in advance and keep it refrigerated until serving. For the best texture, I prefer these relatively fresh so the apple remains crisp.
Is a date caramel apple the same as a traditional caramel apple?
No. Traditional caramel is made by cooking sugar with ingredients such as butter or cream. This recipe uses flattened Medjool dates to create a naturally sweet, chewy layer that gives you some of the same eating experience without making caramel.
How to Make a Caramel Apple with Dates
1. Flatten the Dates
Remove the pits from the Medjool dates.
Arrange the dates open-side up and side by side on a sheet of parchment paper or plastic wrap. Press them together to create a rough rectangle.
Cover with another sheet of parchment or plastic wrap.
Use a rolling pin to flatten the dates into a thin, sticky sheet.
Tip: Keep the dates close together before rolling. Their sticky edges will help them form one continuous layer.






2. Wrap the Apple
Remove the top piece of parchment or plastic wrap.
Press the flattened date sheet around the apple using your hands to help it conform to the shape.
If you have any gaps, flatten an extra piece of date and use it like a patch.
Stand the covered apple upright and insert a treat stick firmly into the centre.



3. Melt the Chocolate
Combine the chocolate and coconut oil in a microwave-safe bowl.
Microwave in 30-second intervals, stirring after each, until approximately three-quarters of the chocolate has melted.
Stop microwaving and continue stirring until completely smooth.
Tip: Melting the last pieces with the residual heat reduces the chance of overheating your chocolate.


4. Dip
Dip the date-covered apple into the melted chocolate.
Use a spoon or spatula to help spread chocolate over any areas that aren’t completely covered.
5. Add the Pecans
Immediately dip or roll the chocolate-covered apple in the chopped pecans while the chocolate is still wet.



6. Chill
Refrigerate for approximately 20 minutes, or until the chocolate has set.

If your dates feel particularly firm or dry, they’ll be more difficult to form into one sheet.
Why can’t I cover the whole apple?
Apples vary considerably in size. Use the 10 dates as a starting point and patch any gaps with additional flattened date pieces.
Why is my chocolate too thick for dipping?
Make sure it’s completely smooth and combined with the coconut oil. A spoon or spatula can also help spread the chocolate over the apple rather than trying to get perfect coverage from dipping alone.
Why are the pecans falling off?
Add them while the chocolate is still wet. Once the chocolate begins setting, they won’t adhere as easily.
Why does the chocolate fall off when I slice the apple?
Let the chocolate set before cutting, then use a sharp knife to slice through the coating cleanly.

Instructions
