To make this whipped cream, you will need:
- Heavy Cream (35% m.f.)
- Brown Sugar
- Instant Espresso Powder
- Vanilla Extract

In a medium bowl, combine heavy cream with brown sugar, espresso powder, and vanilla extract. Whip to a light, airy, whipped cream texture. Set aside.

Where do I buy espresso powder?
Instant espresso powder can be find in the coffee/tea isle of your local supermarket or drug store. It is the best way to capture concentrated coffee flavour in desserts without diluting the consistency or affecting the texture of your baked good.
Can I substitute espresso powder with regular instant coffee?
In a pinch, yes – you can! Instant espresso powder is finely ground and dissolves quickly in liquids without need for heat or straining. Instant coffee grounds are a bit coarser in texture and require a little longer to dissolve and may need straining if not all the grounds dissolve in time. I recommend using 2-3x the amount of coffee grounds to achieve the same concentrated coffee flavour.
Can I instead use brewed coffee?
Hmm, good question! While using brewed coffee may seem more convenient, the added liquid may affect the ability of your whipped cream to whip and hold its shape. I highly recommend using an instant espresso/coffee powder to avoid this potential for variability. If unavoidable, I would use the most minimal amount of the most concentrated brewed coffee you have.

Ingredients
- 1 cup (235ml) Heavy Cream (35% m.f.)
- 1 tbsp Brown Sugar *or to your taste!
- 1 tsp Instant Espresso Powder
- 1 tsp Vanilla Extract
Instructions
- In a medium bowl, combine heavy cream with brown sugar, espresso powder, and vanilla extract. Let mixture sit for 1-2 minutes, for sugar to dissolve.
- Whip to a light, airy, whipped cream texture. Set aside.

- Once your whipped cream can hold its shape, stop whipping! Whipping past this point can cause the whipped cream to split! (It really is butter in the making!)
